研發餅乾，推薦的書

我最近去了一間小公司~是做餅乾糖果的~
之後會研發餅乾~ 我是食品營養系的
對於餅乾製作也沒有很熟悉~
所以想請問哪裡有賣餅乾食譜~裡面也有寫原理的~ 比如說各種材料的用途功用~
和做餅乾原理~等等~
或是有更推薦幫助研發的書嗎?~ 可以的話我只要有餅乾的書~ 不要參雜其他蛋糕等等~

還有就是我想請問~ 若參考外面賣的餅乾上面的成分配方~自己再去改變另外添加啥~或是減少啥~~ 或者是說自己調比例~等等 ~
這樣算是抄襲嗎? 會不會違法?@@ ~

有沒有什麼跟研發相關的知識可以提供給我都好^^~謝謝:D
